2 Super quick Coronation Turkey leftovers
If you're looking for a super easy and quick lunch idea that your guests will love. We enjoy Coronation Turkey.
The Garlic Farm in the Isle of Wight makes an amazing light Coronation sauce that is perfect with Turkey. You can buy it direct from The Garlic Farm or Ocado's also stock it. RRP £3.95 a 255g jar.
Coronation Turkey Recipe.
Take 500g to 1.5kg of left over turkey.
Rip, dice or slice the turkey and place into a bowl
A 2-3 table spoons (depending on how much you like) of Coronation sauce, stir and coat the turkey
Add a sprinkle of fresh chopped coriander
Then serve either as a salad or in sandwiches.

Coronation sauce ingredients
6 tbsp mayonnaise
2-3 tsp mild curry powder, to taste
½ tsp ground cinnamon
(Optional) 1-2 tsp sultanas
500g shredded or cubed cooked turkey
Mix all the ingredients together and coat the turkey fully.
(If you don’t have Geeta’s mango chutney, you may want to add some ground cumin seeds, fenugreek, nigella seeds, pepper, cardamom and clove - as Geeta’s mango chutney really made it taste special for us.)
Serve the turkey on an open piece of sourdough, on crackers or just eat a bowl of it.
