Bramble Farm’s sesame seeded turkey schnitzel recipe
Turkey schnizel
Preparation time: 20-30 mins
This is an adaptable wiener schnitzel recipe using free-range Bramble Farm turkey. It’s great for use with breast or thigh meat and is perfect if you’re buying a turkey crown or Roll joint from Bramble Farm, as each crown and roll comes with the legs and thighs packed separately for use in recipes like this. Using sesame seeds gives extra crunch the flavour from the fabulous seed oil is heavenly.
The inspiration for the recipe comes from Ottolenghi, but we have to thank friend of Bramble Farm Turkeys, Ruth Macintyre of Ruth’s Little Kitchen, for giving it a turkey twist.
If using a thighs, firstly de-bone it. Then lay out the meat flat and cut on the diagonal – do not stress if you do not get perfect or even cuts – you can always have smaller pieces and they will be equally delicious. It all depends on the size of the thigh. When using a 450g breast, cut into 2 cm thick pieces (any width), it made 5 steaks.
Whichever cut of meat you’re using, try and bash each piece to a 1cm thickness, this then reduces the cooking time and keeps the meat juicy and flavoursome.
Ingredients
This was for a 450g breast
Pinch of cayenne
1 egg, beaten
74ml sunflower oil
1 lemon quartered to serve
Salt and pepper
Sunflower oil, for frying
70g (3oz) dried breadcrumbs or panko
50g (2oz) plain flour
80g (3oz) sesame seeds (if you have black sesame seeds, we suggest 20g black & 60g normal)
1 tbs ground coriander
½ tsp turmeric
Equipment
Meat mallet, rolling pin or tin – for tenderising
4 plates – for coating stages
Frying pan
Method:
Slice turkey meat into 2cm thick pieces
Use a meat tenderiser to bash it into thin pieces between cling film or a plastic bag until it is ideally 1cm thick.
Put breadcrumbs into a bowl
In a separate bowl add the seeds and season well with salt and pepper
Plate 1 – Put the flour on the plate and spread it out.
Plate 2 – Pour the beaten egg onto another plate.
Plate 3 – Spread out the breadcrumb and seed mix, spices, salt and pepper onto another plate.
Coat each chicken breast lightly with flour. Then dip in the egg, dripping off the excess. Finally dip into the breadcrumb and seed mix, coating thoroughly.
Plate 4 – place coated pieces of turkey ready for frying
Cooking
Put around an inch of sunflower oil in a large frying pan and heat to 180C or until a breadcrumb browns in 10 seconds (if it browns quicker than this, it is too hot)
Fry the turkey on each side for 3-4 minutes until golden brown and crisp.
To check your schnitzels are cooked, cut into the meat at the thickest point – it should not be pink. Alternatively, use a temperature probe (75C, and available to buy from us)
Drain the seeded turkey schnitzel on paper towels.
To Serve
Serve with lemon, a lovely green salad.
We have it with roasted vegetables and jacket potatoes
If serving as a canape - we like to eat it as it is & dip it into mayonnaise or a garlic alioli.
Traditional wiener schnitzel is served with a tomato sauce and spaghetti. If you have time a Pomodoro tomato sauce is great.
