Turkey Hoisin Spring Roll recipe
A lovely way to use up many leftovers from Christmas, these turkey spring rolls can be partially baked and then frozen. Packets of filo vary in size, and this recipe and taste can be adjusted according to the amount of people, leftovers and personal preference! If you enjoy ‘spicy’, add some chilli. We like to bulk the rolls out by using noodles, but again they are not a necessity.

Preparation time: 30 minutes
Cooking time: 20 minutes
Ingredients:
200g (7oz) cooked turkey breast- cut up finely
150g (5oz) grated carrots
150g (5oz) shredded Brussels sprouts or cabbage
20g (1oz) fresh ginger
A bunch of spring onions – finely sliced
1/2 tsp Chinese five spice
4 tbsp hoisin sauce
Thread noodles – optional
8 sheets of filo pastry
Sesame seeds
Vegetable oil for greasing
Sweet chill dip or plum sauce for dipping
Method
Preheat oven 180C/Fan 160/ Gas Mark 4
Cook the noodles according to instruction (if using).
In a large bowl, add all the vegetables, spices and turkey – mix well.
Add noodles (if using) and hoisin sauce.
Take one half piece of filo pastry at a time (leave the rest covered over to prevent them drying out)
Place it on a clean surface and brush a 1 inch border around the filo sheet.
Place a spoonful of the turkey mixture at one end of the filo in between the border.
Roll the filo around the mixture until a quarter way along the filo sheet, then fold each side of unfilled pastry into the centre.
Continue to roll all the way down and then place the cylinder seam side down on the baking tray.
When all the spring rolls are made, lightly brush the tops with oil and sprinkle with sesame seeds.
Bake oven for approx. 20 minutes, until golden brown.
Cool on a baking rack if not eating immediately.
Serving suggestions:
Serve with sweet chilli dipping sauce – we love the one from Surrey producer Jam Packed Preserves.
