Turkey Gratin recipe
The beauty about this recipe is that it can be used as the base for many others! Add vegetables, maybe some left over ham, forget the gratin topping and put on a pastry top – you get the idea! It is adaptable to whatever you have on the day, and also a really good one to freeze. If you have less turkey, simply make less sauce.
Created by friend of Bramble Farm Turkeys, Ruth Macintyre of Ruth’s Little Kitchen, there is no salt added to the recipe as the parmesan already has plenty – we would recommend tasting the sauce before you add it in.
Cooking time - 25-30 mins
Ingredients
500-800g cooked turkey
50-75g fresh breadcrumbs (fresh ideally)
60g of parmesan cheese, grated
50g butter- plus a little extra to butter dish
3 tbsp plain flour
400 ml chicken or turkey stock
300ml single cream
2 tsp of Dijon mustard
Method
Pre heat oven to 180°C/Fan160C/Gas No. 4
In a bowl add a quarter of the cheese, breadcrumbs and a good grind of black pepper – mix well
On a medium heat, melt the butter and when foaming,stir in flour, cook for 1 minute
Whilst constantly stirring, slowly add all the stock and then add the cream – when all is added keep stirring for another 5 minutes.
Add the mustard and salt and pepper.
Take off the heat and then add the rest of the cheese and turkey- mix
Add the turkey mixture into a buttered heatproof dish.
Evenly sprinkle the breadcrumb mixture over the top.
Bake in the oven for 20 mins or until topping is crispy and bubbling
Suitable to freeze. To cook, defrost in the fridge overnight and cook as normal
Serving suggestions:
Serve with salad or some steamed vegetables
